It seems you have a plugin caused this issue.
Have you tried deactivate all plugins ( except recommend plugins come from the theme ) and try it again?
After it work, let's enable each plugin to check what's plugin caused this issue.

i've been trying to access the category pages but nothing is loading for that link, which shares the same design as the author page (which is loading fine).
I've already uninstalled the demo and re-isntalled the demo with new demo data for Minimalism theme and the same issue is still popping up.
