I just checked and I see the masonry gallery still working fine from my-end.
So, I think you did something wrong to caused this issue.

I have the soldead theme but after the major update of Wordpress, I cannot use the masonry gallery....

To change the image size on the justify gallery, you can change the height for images on this style via Customize > Single Post Options > Custom the height of images on gallery images (unit is pixel)
It can't be set maximum images in a row is 3. You can check justify gallery demo here to know how it works

Yeah, the columns doesn't apply for justify gallery and of course sorting photos doesn't work on masonry gallery - all of this is normal because justify can't be works when you fixed the columns and mansory layout is a mixed items inside it, so of course the sorting doesn't work
