After some more research, I think my question is: Where do I set the colors for the mobile responsive menu?

I'm struggling with the options for the vertical/mobile menu.
1) The options for the Vertical & Hamburger menu in the Customizing tool does not set the options for the vertical menu that shows up when a website is minimized or displayed on the mobile. Where do I set those options? (See MinimizedWindowVerticalMenu.jpg)
2) When I enable the hamburger menu and set the options, my text color option doesn't display correctly. The color I've set for the text instead shows up as the hover text. (See HamburgerHover.jpg & HamburgerTextColor.jpg).
Can you please help?
