Hi,
You can change the custom excerpt length via Customize > Other Layouts Options > Custom Excerpt Length.
For photos, if you want to get it smaller, you can go to Customize > Standard & Classic Layout Options > and check to "Make Featured Image Auto Crop"

Thank you! However, my photos for each blog excerpt are extremely large, so where do I go to make sure the photos are the right size and orientation? And I only have two lines of text in the excerpt, how to I change that to 4 or 5?

I think you can import Hipster demo style to your site to get the same config.
For import a demo, please make sure you've installed plugin Penci Soledad Demo Importer. If not, go to Appearance > Install Plugins > and install & activate this plugin.
When you done, go to Appearance > Import Demo Data > and read the IMPORTANT NOTE at the top before import this demo for your site.
After done, go to Customize > General Options > on "Homepage Layout" > select "Classic Posts"
And go to Customize > Standard & Classic Layout Options > and check to "Auto Render Posts Excerpt"
