Hi,
1/ You can remove "Category:" words on category page via Customize > General Options > "Remove "Category:" words on category page"
2/ You can change layout for general category pages via Customize > General Options > Category, Tags, Search, Archive Layout
And if you want to change layout for specifict category page, please go to Posts > Categories > edit category you want to change layout > scroll down and on "Select Layout for This Category"
3/ And you can display each sidebar for each category pages by create a new sidebar for each category page via Appearance > Widgets.
After that, go to Posts > Categories > edit category you want to change sidebar > and select sidebar you want to display for this category on option there.

I’d like to change (remove “Category:”) the title and layout of posts on the category page. And can category pages have different side bars. Thanks

Hi,
Can you tell me what do you want to customize on category pages?
If you're looking for use page builder on category pages, it can't - because no any page builder can be works on category pages.
