Ok understood.
So all those pre established layouts are not modifiable.
The only way to have full control of the customisation of a category is create a page. And on this page to select a category to display on it and to customise it the way we want (colors, remove sharing layout etc...) ?

You can select the layout for each category by going to dashboard → Posts → Categories: select the category you want to edit, then choose the layout at Select Layout For This Category.
The current version doesn't support a custom layout for a tag, archive, ... We'll add this in the future theme update.

Is there any way to customise each "Category, Tag, Search, Archive Layout"
If i choose list post can i customise it (categories colors etc...)

You can change the layout of the category by going to Appearance → Customize → General → Category, Tag, Search, Archive Pages: change the layout at Category, Tag, Search, Archive Layout
