In general, if you want to hide the data on the Google search result page, you need to hide the post date on your site.
Go to Appearance → Customize → Single Posts → General: turn on the "Hide Post Date" option.

Yes, I have read the Rank Math article, which says, and I quote, "In both these cases, we added structured data with datePublished and dateModified Schema, and we could interpret that search engines display dates when they’re clearly visible inside the content. Hence to completely remove the date from SERP, we request you to get in touch with your theme provider."
