No - You're viewing your "Pages" - NOT category pages.
Check again the image I sent - The Categories appears below "Custom Links" on the left side.

Thanks. Seems like I don't have that page in my list any more (see picture attached), I might have deleted it in the beginning as I didn't know how to use them.
Can I add it back again by importing the theme demo data again or will that ruin everything?

This issue caused by you're using Page on your category mega menu.
Please use Category Page and set category mega menu for Category Page - check this image.

Hi and thank-you,
My issue is with the menus - I have got all of the pictures to show but if you click on the actual word ie 'Dinner' you are taken to a blank page with no links.
I don't know how to make this page have the posts like the one in the demo.
Essentially I don't want anyone to go to a blank page, but I don't know how to make the posts appear on the 'category' page, under the menu.
