I've checked your site, the problem comes from the WP Subscribe plugin. Please try to disable this plugin then check again.

I have a bunch of plugin's installed. We migrated everything we had to WP Engine to setup the new Soledad theme. Not sure if one of them specifically changing the customizer though.

Have you installed any customizer plugins? The color field shows the hex option field properly like in the screenshot below:

When making a color selection we are unable to enter hex codes. The option for it does not show up. This is in the Penci Header Builder, and in the Appearence -> Customize -> General -> Color
