Hi,

You can't do that. The cookie by default, Wordpress saved a lot of cookies. You just need let your visitorsknow that - when they visit your site, they need to follow the cookie policy on your site. If they don't like that, they can select to leave your site.

about the GDPR Policy Options integrated I can not find the button to allow users to disable analytical or profiling cookies...
