I use SEO Framework with my Soledad theme, which gives me the option of selecting a custom social image URL for each post (in other words, when sharing the post, I can use another image, rather than the default featured image). This works fine with Twitter, but for Pinterest, it always selects the featured image, rather than the default image.
The SEO Framework plugin developer told me that some themes might add "Open Graph" metadata. The reason it works well with Twitter is that Twitter meta tags take precedence over Open Graph metadata, but this does not seem to be the case with Pinterest and so to resolve this, I need to check out the "Social/SEO" settings on my theme, and see if the metadata output can be disabled there.
Do you know if this can be done?
