Actually... I figured it out.
Jetpack was the culprit again.
Jetpack was creating a mobile theme and preventing the AMP plugin from optimizing the site. So thanks a TON for the help!!!
Ok so disabling the jetpack lazyload fixed my problem with the sidebar recent posts thumbnails. Thanks for that!!
However, I have followed correct steps for AMP configuration and everything should check out, however the blog still shows as it normally would, without the AMP customizations...
Is it possible another plugin is interfering? maybe I have my site set up to be "responsive" and that takes effect "before" the AMP settings, therefore nullifying them?

1/ For AMP plugin issues, please check guide here to know how to config AMP.
2/ This issue caused by you've enable lazyload images from Jetpack plugin - Let's deactivate it.
This theme already supports for lazyload images - so, you don't need for use any lazyload images plugin.
