What I want to do is to establish which sidebars go with all the posts in a given category.

Unfortunately, this theme not compatible with Easy Custom Sidebars plugin.
Don't worry about the issue, this theme support add custom sidebar .
Please go to Dashboard > Appearance > Widgets then add custom sidebar as screenshot http://prntscr.com/oonel9
